Position Summary
The Baker is responsible for preparing and baking high-quality Japanese-style bagels, breads, and seasonal baked goods while maintaining WA-BAGEL's standards for quality, consistency, and food safety. This role supports all aspects of dough production, fermentation, shaping, baking, and maintaining a clean and organized bakery environment.
Key Responsibilities
- Prepare Japanese-style bagels, Melon Pan, Curry Pan, and other breads according to company recipes and production standards.
- Mix dough and monitor dough temperature to ensure product quality and consistency.
- Manage dough fermentation and proofing processes.
- Divide, shape, fill, boil, and bake bagels and breads.
- Follow recipes and production procedures to maintain consistent size, texture, flavour, colour, and appearance.
- Operate bakery equipment safely and efficiently, including mixers, proofers, and ovens.
- Prepare and portion ingredients for daily production.
- Maintain sourdough starters and fermentation processes under established procedures.
- Maintain a clean, organized, and sanitary work area in accordance with food safety standards.
- Assist with inventory rotation and notify management when ingredients require replenishment.
- Support bakery classes, special events, and other bakery operations as required.
- Follow all health, safety, and sanitation policies and procedures.
- Work collaboratively with the bakery team and complete other duties as assigned.
Qualifications
- Previous experience with bread, bagels, sourdough, or other fermented dough production is preferred.
- Baking or pastry education is an asset.
- Passion for artisan bread-making, fermentation, and Japanese baking techniques.
- Ability to work in a fast-paced production environment while maintaining attention to detail.
- Able to stand for extended periods, perform repetitive tasks, and lift up to 25 kg (55 lbs).
- Reliable and able to consistently start shifts at 6:00 AM.
