We are seeking a dedicated Chef de Partie to join our culinary team. The Chef de Partie is responsible for the execution and management of a designated station within a traditional Italian brigade kitchen. This role ensures authenticity, consistency, and efficiency in preparing regional Italian dishes while maintaining the highest culinary and hygiene standards.
In addition to hourly pay, you will be taking part in the kitchen tip pool.
Kitchen Stations:
- Primi – pasta, soups
- Secondi – meat and fish main courses
- Antipasti / Garde Manger – cold appetizers, salads
- Pizza / Wood-Fired Forno Oven – pizza, baked items.
Responsibilities
· Prepare and cook menu items specific to assigned station with precision and speed;
· Execute traditional Italian techniques (e.g., proper pasta cooking, sauce preparation);
· Ensure dishes meet presentation and flavour standards rooted in authentic Italian cuisine;
· Maintain full control of mise en place, prep lists, and station organization;
· Monitor stock levels and communicate shortages to Sous Chef;
· Ensure station is clean, stocked, and service-ready at all times;
· Supervise and train Commis Chefs and kitchen assistants;
· Execute prep tasks assigned to your station efficiently within quality standards;
· Follow standardized recipes and plating guides;
· Maintain portion control and minimize waste;
· Cook menu items with precision, ensuring consistency and quality;
· Adhere to all food safety and sanitation standards;
Requirements
· 2+ years experience in a professional kitchen, preferably Italian cuisine;
· Knowledge of Italian cooking and ingredients is a plus, but not a requirement;
· Ability to work a high-volume, fast-paced service;
· Strong knife skills and station discipline;
· Team-oriented with good communication;
· Consistent execution under pressure during peak service;
· Strong attention to detail and pride in craftsmanship;
· Reliability, punctuality, and professionalism;
· Willingness to learn and grow within the brigade;
· Positive attitude towards colleagues and guests.
Job Type: Full-time
Pay: $21.00-$23.00 per hour
