POSITION SUMMARY
Mielle Chanel Inc. is now a Full Blown Japanese, Korean and Thai Restaurant. One of our Resto's mains is Sushi and we need employees on board who can work with our other chefs in the Kitchen.
MAIN DUTIES AND RESPONSIBILITIES:
Safety and Sanitation Compliance
A Japanese cuisine chef must be an expert in the food safety regulations and procedures that apply to his specialty. Regularly assessing the quality of ingredients is a must for our chefs. Ensuring that tools such as thermometers and pH meters are in good working order will help with this process. A chef must also maintain a clean work environment in order to reduce the possibility of food contamination, and he/she must regularly wash their hands and cooking utensils. All sushi chefs are required to know their local area's food safety regulations in order to remain compliant.
Preparation
Raw fish may be the primary ingredient in a sushi dish, but that doesn't mean that adequate preparation didn't need to happen before a dish was served. A sushi chef must take regular inventory of his restaurant's food supply, including fish, rice and other materials. He must also ensure that there are adequate amounts of ingredients for the soups and sauces that many customers have come to enjoy from sushi restaurants.
Creativity in the Kitchen
As a Master of Culinary Arts, a sushi chef must know the signature dishes of his specialty, and he/she should also be able to innovate in the kitchen. Conceptualizing new dishes and unleashing their inner creativity will excite the customers and give them new reasons to return to the restaurant. He/She can achieve this by combining different ingredients or creating entirely new recipes. A sushi chef may also display their creative side by finding new ways to garnish his food presentations.
The chef-sushi is an ambassador for the quality of sushi and exceptional service; you are the first point of contact for customers. Your job will be to ensure customer service of impeccable quality and to participate in all aspects of the prepared sushi.
Main Function - 80%
· Make sushi and other dishes as required
· Prepare the menu
· Manage your cooking area
· Order the right products
· Assist with inventory management
· Make sure all ingredients are always fresh and presentable
· Participate in the preparation and implementation of all ingredients;
Secondary Function – 20%
· Work with your colleagues to maintain a clean restaurant environment (hygiene and safety);
· Do any other task required for the smooth running of operations.
Other duties as required.
These will be learned onsite with the Operation Manager and Head Chef
REQUIRED KNOWLEDGE, SKILLS, ABILITIES AND PERSONAL ATTRIBUTES
The Sushi Chef must know:
· The differences between different types of rolls/sushi & their ingredients
· Must have great knife skills
The Sushi Chef should be able to:
· Be able to distinguish between different types of fish
REQUIRED QUALIFICATIONS
· Minimum 1 year experience as a Sushi Chef
· Minimum 2 years in the Hospitality industry
· Health Food Safety Certificate (An Asset)
