Summary of Position:
Wash and clean tableware, pots, pans and cooking equipment. Keep the dish room, dish areas and equipment clean and organized.
Duties & Responsibilities:

Load, run and unload dish machine.
- Wash all dishes and food containers used in the restaurant.

Keep the dish machine clean from food residues and grease and report any functional or mechanical problems immediately.

Monitor dish machine water temperature to ensure sanitary wash cycle.
-
Wash, store and polish all tableware and kitchenware as necessary.
-
Keep dish room clean, safe and organized (including walls and all areas from the floor up to 8 feet height).

Maintain adequate levels of clean tableware for dining room and kitchen.

Bag and haul dish room trash to dumpster at designed times.
-
Keep the garbage cans clean and sanitized.
- Wash mop bucket on regular basis.
-
Handle tableware carefully to prevent breakage and loss.
-
Maintain adequate levels of dish detergents and cleaning supplies.
-
Clean food preparation and production areas as required (indicated by immediate supervisor or cook).

Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor.

Maintain employee washroom clean and tidy.
Tasks will be added to your daily, weekly, and monthly checklists.
- Maintain elevator’s floor and walls clean inside and out.
- Wash mop sink.
- Wash the exterior and interior of each garbage can.
- Wash all the hand sinks and surroundings (including piping).

Wipe down and clean grill, range, flattop, and fryer. Don’t forget to clean behind and underneath as well

Wipe down walls and doors, or wherever there are splashes

Mop floors

Disinfect waste/compost disposal area to prevent pests and the spread of bacteria; mop floors around garbage cans.

Closing duties:
- Turn the dishwasher off.
- Clean the interior of the dishwasher, remove and clean the filters.
- Make sure the garbage has been hauled to the dumpster.
- Make sure that all dishes, food containers and tools are returned to the respective places.
- Sweep and mop the kitchen after cooks have finished their duties. Mop has to be washed, rinsed after and left drying.
- Delime your sinks and faucets
- Empty your reach-in refrigerators so you can wash and sanitize them
- Clean all coffee machines
- Clean oven (Use your manufacturer’s guide on how to do this one)
- Clean freezers
- Wash behind ovens, stoves, and fryers to eliminate grease build-up, which can result in a major fire hazard
- Wash walls and ceilings for grease and food stains
- Wipe down all storage areas
- Change pest traps (if applicable)
Qualifications:
-
No previous restaurant experience required.
-
Be able to work in hot, wet, humid and loud environment for long periods of time.
- Be physically able to lift, reach, bend and stoop.

Be able to working in a standing position for long periods of time (up to 5 hours).
-
Be able to safely lift bags, cases and stacks weighing up to 60 pounds up to 30 times per shift.

Update and read material safety data sheets, which outline how to safely use any chemicals in your restaurant.
Duties & Responsibilities:
FRONT OF THE HOUSE
o Empty Garbage remove trash & Replace liners
o Thoroughly sweep, mop & degrease flooring
o Vacuum all carpeted areas, under tables & mats
o Remove fingerprints, smudges from walls, doors, switches, etc.
o Wipe down & dust all ledges, railings, picture frames under 7ft
o Clean & polish metal on doors including handles
o Clean all glass partitions
o Clean walls where required in restaurant from floor up to 7ft
o Refill all soap, tissue and hand towels
o Thoroughly vacuum booth bench cracks
o Wipe down all the counters
o Clean table bases where required
o Clean the seats and benches
o Clean & polish all plumbing fixtures
o All stairway and handrails to be cleaned
o Spot clean any spills/gum on carpeted areas
o Dust rails and spindles
o Clean staff washroom
Special cleaning black stone counters in the washrooms and food bars
Dust lower hanging lights as required including the hot food bar’s
Rear employee entrance clean floor (weekly)
Dust and wipe down the light fixtures
Wash door glass windows and all doors
Disinfect the door handles
o Front of House High level dusting
o Dust any decorations or wall art
o Deep Bar floor cleaning
o Clean bar anti-fatigue mats
o Full window cleaning
