RESPONSIBILITIES
The Sous Chef leads daily operations, ensure food quality and safety standards, provides leadership in the kitchen for YWCA's food services, stepping in for the Chef Manager as needed. Demonstrates a strong commitment to developing and delivering high-quality food services and hospitality.
KEY RESPONSIBILITIES:
- Plans and directs daily food preparation and cooking activities in the YWCA Café and catering;
- Leads weekend food service for transitional housing services;
- Estimates food requirements, orders products, monitors and improves inventory control process;
- Prepares and cooks for the Café and catering services, filling in production gaps where required;
- Instructs cooks in preparation, garnishing and presentation of food and new cooking techniques demonstrates new equipment;
- Plans menus and updates all recipes to ensures quality of food and portion control;
- Ensures proper safety and sanitation in kitchen;
- Ensures proper equipment operations and maintenance;
- Supervises and trains staff as required;
- Ensure compliance with the Health Protection and Promotion Act;
- Works safely, reports all workplace hazards and follows all YWCA Hamilton Health and Safety policies and procedures;
- Nurtures and forms meaningful internal and external working relationships and partnerships;
- Understands emerging trends, leading practices, industry professional standards;
- Supports YWCA Hamilton mission, vision and values;
- Performs other duties as required.
WORKING CONDITIONS:
- Works 37.50 hours work week;
- Ability to use frequent light to medium physical effort: lifting up to 25 kg, bending and stooping;
- Work schedule includes days, afternoons, evenings and weekends;
- Travel may be required within the Hamilton and Halton Region.
QUALIFICATIONS
- Completion of 2 years’ college in Culinary Arts or equivalent academic and/or work experience;
- Minimum 3 years’ hospitality experience, with a minimum of 1 year of kitchen supervision experience;
- Catering experience is an asset;
- Must have Safe Food Handling certificate; understanding of Hazard Analysis Critical Control Point (HACCP);
- Must have menu planning, costing and budget experience;
- Must provide a current Criminal Record Judicial Matters Police check or willingness to obtain at own cost;
- Must have current Standard First Aid and CPR C certificate or willingness to obtain at own cost;
- Valid Class G Driver’s License is required;
- Excellent written and verbal communication skills and ability to lead under pressure;
- Ability to work with a feminist, anti-racist/anti-oppressive perspective;
- Must be available to work weekends as well as the ability to work various shifts including days, afternoons, evenings and weekends.
