Job Description
Reporting to the Executive Chef, this position is responsible for the quality, authenticity, specification compliance, food and labour costs, staff scheduling, menu design and planning. The Sous Chef ensures customer food is produced to specific schedules and customer specifications. Other responsibilities including leading menu presentations ensuring the highest quality standards.
Job Duties:
- Ensures efficient production of all food items to provide the highest quality on a timely basis.
- Ensures strict adherence to customer and CLS specifications and procedures.
- Ensures proper handling, cooking and storage of all perishable, raw and cooked materials.
- Assists Executive Chef in development of new menus.
- Ensures labour/food costs are met as per budget.
- Oversees the supervision of kitchen staff which includes work allocation, training and problem resolution.
- Ensures food quality, portion control, appearance and taste meet specifications.
- Sets targets, evaluates performance and implements progressive discipline when necessary.
- Develops and assists with the implementation of policies and procedures consistent with CLS requirements to ensure efficient and safe operations.
- Develops department targets, goals, objectives and timelines.
- Participates in pricing development.
- Assists in responding to customer inquiries and concerns.
- Works with Purchasing Manager with food order quality, quantity and product selections.
- Liaises with Stores to ensure receipt of food and raw products comply to pre-determined standards and specifications.
- Ensures adherence and enforcement of all Federal, Provincial and Municipal Health & Safety Standards and Regulations.
- Participates in product design/development activities.
- Coach and provide leadership to all the staff of the kitchen, either directly or through the Executive Chef ensuring the training and development of staff, providing input for performance, appraisals, and disciplinary action, within the values and guidelines of CLS Catering Services Ltd.
- Orders supplies to stock inventory appropriately.
- Provide input for menus, creating, developing, and recommending recipes, for the use of other staff, to create a consistent and quality food product.
- Conduct yourself as the Executive Chef would in his/her absence, in accordance with his/her values and positive motivation tools.
- Ensure that the morale of the kitchen staff is maintained by practicing positive strategies to motivate staff, encourage self-esteem and efficiency.
- Strive to uphold a safe working environment and be Health and Safety conscious and actively involved in maintaining and improving a safe work environment.
- Manage employee performance through training, coaching, or corrective action as required, excluding termination of employees.
- Carry out other related duties which may be assigned from time to time.
Skills and Abilities Required:
- Culinary Education Trade Papers, Red Seal or Equivalent required.
- Certifications as required to comply with provincial regulations.
- Food Safe Certification.
- Minimum of 3 years' experience in a Sous Chef position or higher in a high volume food environment
- Food and Beverage culinary management experience with demonstrated leadership.
- Extensive knowledge of food handling and sanitation standards.
- Must be flexible with hours of work and adapt to schedule changes to accommodate operational requirements.
