Job Summary:
We are seeking an experienced and talented Lead Cook to join our team. As a Lead Cook you will responsible for the proper preparation and execution of proteins, vegetables, starches, sauces, stocks, and various other dishes. We are a large scale catering company, experience with large quantity cooking is a must. Experience in high end event catering is also a must as we also provide catering for high end events as well as detailed on set prop food.
Our background ...We are a film production catering company, feeding film crews daily for weeks, often months at a time. Great food and quality is a must. Our menus change daily and providing new and exciting menu ideas is also a must.
Duties:
- Help plan and execute menus in collaboration with the Chef, kitchen team and management team
- Oversee and assist the kitchen team with prepping and execution.
- Oversee all inventory and order supplies as needed to maintain stock levels with our Inventory manager.
- Train and supervise kitchen staff, ensuring they adhere to food safety guidelines and follow proper food handling procedures
- Assist the Chef in monitoring all kitchen operations to ensure efficiency and productivity when it comes to daily hours, food prep, food quantities and quality.
- Collaborate with management team to ensure daily production numbers and prep is accurate and necessary adjustments are made.
- Maintain a clean, organized and happy kitchen environment
Experience:
- Proven experience working in a high-volume kitchens, large quantity catering experience (feeding 1000-15000 plus meals daily)
- Strong knowledge of food safety regulations and best practices
- Excellent culinary skills with the ability to create unique and flavourful food while following set food cost guidelines.
- Previous experience in team management and leadership roles is a must.
- Familiarity with kitchen equipment and tools is a must
- Ability to work under pressure in a fast-paced environment.
