Job Title:
Line Cook/ Sous Chef
Main Purpose of the Job:
Support the chef in preparation of the menu, specialty food items and assist kitchen staff to achieve the high standards expected of the restaurant.
Reports to:
Chef, General Manager, Service Manager
Responsibilities
- Execute menu items according to Company specifications in both prep and line areas.
- Assist culinary operations on a shift basis under the guidance of the Chef to ensure a clean, organised and successful kitchen with a focus quality control.
- Ensure the hygiene standard of the kitchen and supporting areas remain high through the development of adequate protocols.
- Maintain high standards of cleanliness and work.
- Assist in the recruitment and selection of new staff.
- Provide new staff with assistance as required.
- Under the direction of the head chef, ensure standards are consistently met, including but not limited to; portion sizes, recipes, stock control
- Offer ideas to the chef on menu items.
- Learn how to demonstrate new dishes in a seasonal and ever changing menu and ensure all front of house staff are fully briefed on all dishes leaving the kitchen
- In collaboration with the chef, ensure a rotating and nutritious meal is prepared for all staff on duty
- Assist in recording stock and organizing inventory to meet business needs.
- Communicate stock inventory with the head chef and the rest of the kitchen team in a clear and on a consistent basis
- Communicate any customer complaints and provide feedback to the head chef and/or general manager/ service manager, ensuring high levels of customer service can be upheld.
- Assist in observance of the restaurant's health and safety procedures including but not limited to; first aid, injury reporting, documenting incidents/ accidents, public health standards etc.
- Assist the chef to make sure that proper procedures are followed when a kitchen employee gets injured at work and assisting in a safe return to work is made available, if applicable.
- Maintain clear, kind and professional communication with all staff and guests, in line with the company’s code of conduct (see employee manual).
- Assist the Chef as required and handle other duties as assigned.
Skills and Qualifications
- Experience cooking in a high performing restaurant setting
- Strong communication skills to effectively take part in kitchen operations
- Knowledge of hospitality industry standards and practices
- Ability to work efficiently in a fast-paced environment
- Food Handler’s Certificate (company will provide as required)
- Ontario Health & Safety Training (4 courses provided by company as required)
Working Conditions:
- This position will require standing for long periods.
- This position will require lifting of equipment and appliances.
- This position requires evenings and weekends.
- This position requires working in hot and cold conditions
- This position requires some customer facing interaction (open kitchen)
