This is a hands-on production role involving the daily creation of premium chocolates, bonbons, seasonal collections, and fresh gelato for our retail customers.

ResponsibilitiesChocolate Production
- Prepare mise en place and accurately scale recipes
- Temper chocolate using professional techniques
- Produce artisan bonbons, chocolate bars, truffles, spreads, and seasonal products
- Prepare ganaches, caramels, pralines, giandujas, and other fillings
- Cast, fill, cap, and demold chocolate molds
- Airbrush and colour chocolate molds using coloured cocoa butter
- Spray bonbons and decorative chocolate products using professional spray equipment
- Maintain exceptional quality, consistency, and presentation standards
Gelato Production
- Prepare gelato recipes and mixes from scratch
- Operate batch freezers and gelato production equipment
- Produce gelato, sorbets, and specialty frozen desserts
- Monitor texture, consistency, overrun, and overall product quality
- Assist in developing new seasonal and signature flavours
General Responsibilities
- Package and label finished products
- Maintain a clean and organized production environment
- Clean and maintain equipment, molds, and workstations
- Follow all food safety, sanitation, and quality control procedures
- Assist with inventory management and stock rotation
- Support retail operations when needed
- Assist with seasonal production, workshops, and special events
- Contribute ideas for new products and continuous improvement
- Perform other production-related duties as required
QualificationsRequired
- Minimum 2 years of professional chocolatier experience
- Experience tempering chocolate and producing molded chocolates
- Experience spraying bonbons using coloured cocoa butter
- Food Handler Certificate
- Strong attention to detail and commitment to quality
- Excellent organizational and time management skills
- Ability to work both independently and collaboratively
- Ability to lift up to 35 lbs occasionally
- Strong English communication skills
Preferred
- Previous gelato or artisan ice cream production experience
- Experience operating professional chocolate equipment and spray systems
- Knowledge of artisan confectionery techniques
- Experience in a pastry, chocolate, or dessert production environment
Previous gelato experience is considered an asset but is not required. We are happy to train the right candidate in our gelato production methods.

Schedule
- Day shifts
- Weekend availability as required
- Additional hours during holiday seasons and peak production periods
