Position Overview
The Chef de Partie plays a critical role in executing the restaurant’s culinary vision. This position requires mastery of mise en place, refined cooking technique, and the ability to serve dishes with precision and consistency during high-level service. The ideal candidate brings a balance of initiative, discipline, curiosity, and respect for the brigade system.
Key Responsibilities
- Execute dishes to exacting standards, maintaining consistency in seasoning, plating, and timing.
- Maintain meticulous mise en place, ensuring readiness for service and adherence to culinary organization.
- Demonstrate refined cooking techniques—sauté, roast, braise, grill, poach, emulsify, and plate with precision.
- Uphold cleanliness, sanitation, and food safety standards throughout the shift.
- Communicate efficiently with the sous chef, chef de cuisine, and fellow stations to ensure a cohesive and efficient service.
- Participate in menu development, tastings, and seasonal transitions with thoughtful input.
- Monitor inventory needs for your station and assist with ordering, receiving, and storage as required.
- Support other stations when needed, maintaining a team-focused, brigade-driven culture.
- Remain calm and efficient during high-pressure services, maintaining quality even at volume.
- Embody the restaurant’s standards for professionalism, respect, and excellence.
Qualifications
- Previous experience in a fine dining, Michelin-influenced, or high-end kitchen environment preferred.
- Strong understanding of culinary fundamentals, ingredient knowledge, and station management.
- Ability to follow direction with precision yet work independently with confidence
- Excellent knife skills and familiarity with modern and classical cooking techniques.
- Strong organizational skills with the ability to maintain a clean, disciplined workspace.
- Flexible availability, including evenings, weekends, and holidays.
- A genuine passion for craft, learning, and high-level cuisine.
