Sous Chef – La Brezza Ristorante (Calgary, AB)

We are currently seeking a motivated and hands-on Sous Chef who is passionate about Italian cuisine and ready to take a leadership role in a fast-paced, team-driven kitchen.
Role Overview
The Sous Chef plays a key leadership role in the daily operations of the kitchen. This position requires a balance of leadership, organization, and strong culinary execution. The ideal candidate is highly reliable, detail-oriented, and comfortable working both independently and as part of a team.
Key Responsibilities
- Supervise, support, and lead kitchen staff during prep and service to ensure smooth operations
- Actively participate in food preparation and work on the line; lead by example during service
- Be fully capable of working all stations and stepping in wherever required
- Collaborate with the Head Chef on menu planning, feature development, and seasonal updates
- Maintain high standards of food quality, presentation, and consistency
- Ensure strict compliance with food safety, sanitation, and workplace safety regulations
- Assist with inventory control, ordering, and cost management
- Train, mentor, and develop team members to improve performance and consistency
- Maintain clean, organized, and efficient workstations at all times
- Take full responsibility for kitchen operations in the absence of the Head Chef
- Communicate effectively with front-of-house staff to ensure seamless service, including handling special requests and dietary restrictions
Qualifications
- Minimum 1–2 years of experience as a Sous Chef, Kitchen Supervisor, or in a similar leadership role (required)
- Strong cooking fundamentals, prep skills, and the ability to execute under pressure
- Willingness to be hands-on and actively work on the line during service
- Solid understanding of Italian cuisine; familiarity with traditional and modern techniques is an asset
- Culinary diploma or Red Seal certification is considered an asset
- Strong leadership, communication, and team-building skills
- Highly organized with strong attention to detail
- Ability to multitask and perform in a fast-paced environment
- Flexible availability, including evenings, weekends, and holidays
