- Hours per week: 3 shifts per week, Monday-Friday, 9am-3pm or 12pm-6pm

Position Summary
The Lead Prep Cook supports the Food Services & Hospitality Manager in the preparation and execution of campus food services, with a primary focus on the SSMU Daily Lunch program and catering events. In addition to food preparation, this role serves as the shift lead in the Manager's absence, ensuring kitchen operations remain organized, efficient, and on schedule.
The Lead Prep Cook is responsible for coordinating daily prep activities, delegating tasks to Prep Cooks, monitoring food quality and production timelines, and helping maintain a positive, collaborative kitchen culture. This role also contributes to menu development, recipe testing, and continuous improvement of kitchen operations while producing nutritious, high-volume meals.
Responsibilities
- Prepare ingredients for daily lunch service and catering events (chopping, washing, measuring, portioning, assembling)
- Lead daily food production and assist with high-volume meal preparation
- Coordinate daily prep lists and assign tasks to Prep Cooks to ensure efficient workflow
- Act as shift leader in the absence of the Food Service & Hospitality Manager, ensuring production goals and timelines are met
- Monitor food quality, consistency, portioning, and presentation throughout production
- Support menu planning, recipe development, and menu brainstorming alongside the Food Service & Hospitality Manager
- Assist with recipe testing, scaling, and documentation
- Train, mentor, and provide guidance to Prep Cooks and new kitchen staff on food preparation techniques and kitchen procedures
- Monitor inventory levels and communicate ordering needs to the Food Service & Hospitality Manager
- Ensure proper food labelling, rotation (FIFO), storage, and inventory organization
- Maintain the cleanliness and organization of kitchen workspaces in accordance with food safety standards
- Ensure compliance with MAPAQ regulations and all food safety and sanitation procedures
- Operate commercial kitchen equipment safely (ovens, stovetops, steam tables, flat top griddle, rice cooker, etc.)
- Wash dishes, kitchen tools, and equipment as required
- Support waste reduction, composting initiatives, and efficient food utilization
- Assist with catering preparation, event execution, and occasional special events
- Foster a respectful, collaborative, and solution-oriented team environment

- Equipment used, but not limited to:
- Stove tops, ovens, steam tables, flat top griddle, Knives and food preparation tools, pots, pans, rice cooker, and small kitchen appliance, commercial dishwasher
- Basic computer and Google Workspace tools
Qualifications Required
- High school diploma or equivalent
- Valid MAPAQ Food Handler or Food Hygiene and Sanitation Certification
- Areas of experience/skills:
- Two years of experience in a professional commercial kitchen, leading kitchen shifts and supervising staff
- Experience producing high-volume meals in a fast-paced environment
- Demonstrated ability to organize workflow and prioritize multiple tasks
- Interests/knowledge:
- Passion for cooking and producing high-quality food
- Strong interest in food insecurity, food access
- Community-based food programs
- Interest in mentoring teammates and contributing to a positive workplace culture
- Assets
- Experience preparing vegan or plant-based cuisine
- Knowledge of a wide range of cuisines, including vegan, Thai, Italian, French, Cantonese, Vietnamese, Indian, and other international cuisines
- Strong leadership, delegation, and team-building skills
- Excellent communication and interpersonal skills
- Creative problem-solving and adaptability in a dynamic kitchen environment
- Ability to think proactively and adjust priorities as operational needs change

Pay: $20.85 per hour
Work Location: In person
