Job Overview
We are seeking a dedicated and skilled Sous Chef to join our culinary team. This role is essential in ensuring the smooth operation of our kitchen, contributing to meal preparation, and maintaining high standards of food safety and quality. The ideal candidate will have a passion for cooking and a strong understanding of food handling practices within the food service industry.
Culinary Operations
- Assist in planning, preparation and execution of daily food service across the clubhouse, tournaments, weddings, banquets and special events.
- Lead kitchen service; supervise lines setup, service and closing procedures.
- Ensure recipe quality, presentation, and portion consistency.
- Complete prep lists and production schedules; assist with ordering and receiving deliveries.
- Support seasonal menu development and off-site catering.
Food Safety & Kitchen Standards
- Maintain Public Health, HACCP, WHMIS, and Occupational Health & Safety compliance.
- Monitor temperatures, FIFO, sanitation and cleanliness.
- Ensure equipment is maintained; report hazards, incidents and maintenance.
Event & Banquet Operations
- Coordinate food production for tournaments, weddings and member events.
- Assist buffet/plated execution, meet timelines and adjust staffing/production as required.
- Work collaboratively with Front of House and Event teams.
Cost & Inventory Management
- Support food cost targets through recipe consistency, portion control and waste reduction.
- Assist inventory counts, ordering and stock control.
- Support menu costing and labour efficiency.
Leadership & Operational Support
- Train and mentor staff; assist with scheduling and station assignments.
- Address performance concerns and escalate when appropriate.
- Open/Close the Kitchen, respond to changing business needs and perform other duties assigned by the Executive Chef.
Performance Expectations
- Consistently deliver high-quality food and timely service.
- Maintain excellent food safety and cleanliness standards.
- Communicate effectively with kitchen and front-of-house teams.
- Support exceptional member and guest experiences.
Physical Requirements
- Stand for extended periods and lift up to 50 lbs. (23 Kg).
- Available for evenings, weekends, holidays and tournament hours.
- Work efficiently in a fast-paced environment.
