Meat Cutter Apprentice position
The Little Butcher is currently looking for an employee who is passionate about local, healthy, and sustainable food. We are the only butcher shop in the Tri-cities doing nose-to-tail butchery and would like to find people who share our passion for the industry and who are eager to continue learning! We choose to source from independent, local farmers who raise their animals on pasture because we believe in supporting our local business community!
We are looking for an individual interested in learning the trade and coming onto our team as an apprentice. We have worked over the last few years developing our intricate 2 year apprentice program.
Tasks and responsibilities:
- Opening shifts: refreshing and filling our fresh display case with a wide variety of beef, pork, lamb, chicken, and more.
- Breakdowns of whole animals, boning and trimming
- Portioning a variety of cuts
- Stringing or tying roasts
- Sausage making – evening shifts are scheduled twice per week
- Help with daily to do list creation
- Receiving and putting away products
- Bandsaw work - Second year only
- Grinder work
- Filling specialty/custom orders
- Cooking meat products
- Clean up of all heavy equipment, work tables and usual clean up tasks such as dishes, sweeping, mopping and garbage removal.
- All of our employees serve customers and handle cash.
Requirements:
- Heavy lifting of boxes and carcasses up to 60lbs.
- Standing for 10 hours or more.
- Food Safe Certification is an asset.
- Food industry experience of 2 years minimum, with strong knife skills.
- Butcher shop experience is an asset, but will train the right person.
- Availability minimum 3 week days and Saturday. Closed Sunday, Monday and Stat Holidays. Schedules around Thanksgiving and Christmas may include Sunday/ Monday.
