Dough Maker – Full Time

We are hiring a dedicated Full-Time Dough Maker to join our kitchen team. This role is critical to delivering the authentic taste and texture our customers expect and love.
Position Details:
- Wage: $18.00/hour (negotiable with experience)
- Hours: Full-time (35–40 hours per week, daytime shifts)
Key Responsibilities:
Prepare, mix, and produce high-quality pizza and sandwich doughs daily in accordance with established recipes, formulas, and production standards.
Accurately scale and measure ingredients to ensure consistency in dough quality, hydration, fermentation, texture, and flavour.
Execute all stages of the dough-making process precisely as documented, including ingredient sequencing, mixing techniques, timing, and handling procedures.
Monitor and record critical production variables, including room temperature, water temperature, dough temperature, proofing conditions, and fermentation times.
Portion, label, and store dough products appropriately, utilizing FIFO (First-In, First-Out) inventory practices to maintain freshness and minimize waste.
Operate, clean, and maintain dough mixers and other bakery equipment safely and efficiently.
Maintain accurate production records, temperature logs, and quality control documentation.
Follow daily production schedules and ensure all dough products are prepared and ready according to operational requirements.
Maintain a clean, organized, and sanitary work environment in compliance with food safety regulations, sanitation standards, and company policies.
Work collaboratively with kitchen team, and management to support production goals and ensure product availability.
Monitor ingredient inventory levels and promptly communicate replenishment needs to the Kitchen Lead or Manager.
Assist with general kitchen preparation tasks as required, including ingredient preparation, sauce production, and other support duties.
Demonstrate exceptional attention to detail and a commitment to consistency, recognizing that strict adherence to recipes and processes is essential to product quality.
Immediately report any equipment malfunctions, quality concerns, recipe deviations, or operational issues that may impact production or product standards.
Adhere to all workplace health and safety requirements and contribute to a positive, professional, and team-oriented work environment.
Must be able to stand for the duration of the entire shift and safely lift, carry, and move items up to 60 lbsas required.
Qualifications:
- Prior experience making dough in a commercial kitchen or bakery environment preferred.
- Strong understanding of dough fermentation, handling, and shaping techniques.
- Ability to follow recipes accurately and consistently.
- Reliable, punctual, and able to manage time and workflow independently.
- Physically capable of lifting heavy bags of flour (up to 60 lbs) and standing for long periods.
- Passion for Italian cuisine and commitment to craft and quality.
